Ingredients
  • 500 gram Carrots
  • 2 teaspoon Olive oil
  • 2 tablespoon Sherry vinegar
  • 2 tablespoon Honey
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Ground cinnamon
  • 1 teaspoon Orange zest
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 2 tablespoon Fresh cilantro
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Peel and trim the carrots, then cut them into diagonal slices.
  3. In a bowl, combine olive oil, sherry vinegar, honey, ground cumin, ground coriander, ground cinnamon, orange zest, lemon juice, and salt.
  4. Toss the carrots in the spice mixture until well coated.
  5. Place the carrots on a baking sheet and roast for 20 minutes, or until tender.
  6. Remove from the oven and let them rest for 5 minutes.
  7. Garnish with fresh cilantro before serving.
