Ingredients
  • 500 gram Carrots
  • 1 small Onion
  • 2 clove Garlic Cloves
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Ground Turmeric
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 2 tablespoon Lime Juice
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Peel and chop the carrots, onion, and garlic cloves.
  2. In a large pot, heat some oil over medium heat. Add the chopped onion and garlic cloves and sauté until fragrant.
  3. Add the chopped carrots, ground cumin, ground coriander, and ground turmeric to the pot. Stir well to coat the carrots with the spices.
  4. Pour in the vegetable stock and bring to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the carrots are tender.
  5. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  6. Return the soup to the pot and stir in the coconut milk, lime juice, salt, and black pepper. Cook for another 5 minutes.
  7. Serve the spiced carrot soup hot, garnished with fresh cilantro.
