Ingredients
  • 800 gram Butternut Squash
  • 2 teaspoon Olive Oil
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 0.5 teaspoon Cayenne Pepper
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 10 gram Fresh Parsley
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise and remove the seeds. Peel the squash and cut it into 1-inch cubes.
  3. In a large bowl, combine the olive oil, paprika, cumin, cayenne pepper, salt, and black pepper. Add the butternut squash cubes to the bowl and toss until evenly coated with the spice mixture.
  4. Spread the seasoned squash cubes in a single layer on a baking sheet.
  5. Roast in the preheated oven for 30-40 minutes, or until the squash is tender and lightly browned, stirring once halfway through cooking.
  6. Remove from the oven and let the squash rest for 5 minutes.
  7. Garnish with fresh parsley before serving.
