Ingredients
  • 1 medium-sized Spaghetti Squash
  • 2 tablespoon Olive Oil
  • 2 clove Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 4 tablespoon Parmesan Cheese
  • 4 leaves Fresh Basil
Instructions
  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Drizzle olive oil over the cut sides of the squash and season with salt and pepper.
  3. Place the squash halves cut side down on a baking sheet and roast in the oven for 40-45 minutes, or until the flesh is tender.
  4. Remove from the oven and let the squash cool for a few minutes. Use a fork to scrape the flesh into spaghetti-like strands.
  5. In a pan, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
  6. Add the spaghetti squash strands to the pan and toss to coat them in the garlic oil.
  7. Cook for 2-3 minutes, until heated through.
  8. Serve the spaghetti squash with grated Parmesan cheese and fresh basil leaves on top.
