Ingredients
  • 1 cup Black beans
  • 1 cup Corn kernels
  • 1 piece Red bell pepper
  • 1 piece Yellow onion
  • 2 clove Garlic cloves
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 4 cup Vegetable broth
  • 1 can Diced tomatoes
  • 1 piece Lime
  • 1 piece Avocado
  • 2 tablespoon Fresh cilantro
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. In a large pot, sauté the onion, bell pepper, and garlic until softened.
  2. Add the chili powder and cumin, and cook for another minute.
  3. Add the black beans, corn, diced tomatoes, and vegetable broth.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in the lime juice, salt, and black pepper.
  6. Serve hot with diced avocado and fresh cilantro on top.
