Ingredients
  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 can Tomatoes
  • 1 medium Bell pepper
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Cumin powder
  • 1 teaspoon Chili powder
  • 4 cup Vegetable broth
  • 2 tablespoon Lime juice
  • 2 tablespoon Cilantro
  • 1 medium Avocado
  • 1 cup Tortilla chips
Instructions
  1. In a large pot, sauté the onion, bell pepper, and garlic until fragrant.
  2. Add the cumin powder and chili powder, and cook for another minute.
  3. Add the black beans, corn, tomatoes, and vegetable broth to the pot.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
  5. Stir in the lime juice and cilantro.
  6. Serve the soup hot, topped with sliced avocado and crushed tortilla chips.
