Ingredients
  • 1 cup Quinoa
  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 piece Red bell pepper
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 0.5 cup Fresh cilantro
  • 2 tablespoon Lime juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 1 piece Avocado
  • 0.5 cup Tortilla chips
Instructions
  1. Cook quinoa according to package instructions. Let it cool.
  2. In a large bowl, combine cooked quinoa, black beans, corn kernels, diced red bell pepper, halved cherry tomatoes, finely chopped red onion, and fresh cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, and salt.
  4. Pour the dressing over the salad and toss to combine.
  5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Before serving, top the salad with sliced avocado and crushed tortilla chips.
