Ingredients
  • 1 cup Quinoa
  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 medium Red bell pepper
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 1 medium Avocado
  • 1 juice of Lime
  • 0.5 cup Cilantro
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Cumin
  • 0.5 teaspoon Paprika
  • 1 clove Garlic
  • 2 tablespoon Olive oil
  • 1 cup Water
Instructions
  1. Cook quinoa according to package instructions.
  2. In a large bowl, combine cooked quinoa, black beans, corn kernels, diced red bell pepper, halved cherry tomatoes, finely chopped red onion, and chopped cilantro.
  3. In a blender, blend avocado, lime juice, garlic, olive oil, water, salt, cumin, and paprika until smooth and creamy.
  4. Pour the creamy avocado dressing over the quinoa mixture and toss to combine.
  5. Let the salad rest for 10 minutes to allow the flavors to meld.
  6. Serve chilled and enjoy!
