Ingredients
  • 1 head Romaine lettuce
  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 1 medium Avocado
  • 1 bunch Cilantro
  • 1 piece Lime
  • 1 cup Tortilla chips
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
Instructions
  1. Wash and chop the romaine lettuce.
  2. Rinse and drain the black beans and corn kernels.
  3. Slice the cherry tomatoes in half.
  4. Finely chop the red onion.
  5. Peel and dice the avocado.
  6. Chop the cilantro.
  7. Squeeze lime juice over the avocado to prevent browning.
  8. In a large serving bowl, layer the ingredients in the following order: romaine lettuce, black beans, corn kernels, cherry tomatoes, red onion, avocado, and cilantro.
  9. Top with crushed tortilla chips.
  10. Serve with a dollop of sour cream and salsa on the side.
