Ingredients
  • 2 cup Cabbage
  • 2 medium Carrots
  • 1 medium Red bell pepper
  • 1 cup Corn kernels
  • 1 cup Black beans
  • 2 tablespoon Cilantro
  • 2 tablespoon Lime juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin powder
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Shred the cabbage and carrots. Dice the red bell pepper.
  2. In a large mixing bowl, combine the shredded cabbage, carrots, diced red bell pepper, corn kernels, and black beans.
  3. In a small bowl, whisk together the lime juice, olive oil, cumin powder, chili powder, salt, and black pepper.
  4. Pour the dressing over the vegetables and toss well to coat.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Before serving, sprinkle with chopped cilantro.
