Ingredients
  • 1 cup Barley
  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 1 cup Cherry tomatoes
  • 1 medium Avocado
  • 0.5 cup Cilantro
  • 3 tablespoon Lime juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Pepper
Instructions
  1. Cook barley according to package instructions. Drain and let it cool.
  2. In a large bowl, combine cooked barley, black beans, corn kernels, diced red bell pepper, finely chopped red onion, halved cherry tomatoes, diced avocado, and chopped cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Let the salad rest for 10 minutes to allow flavors to meld.
