Ingredients
  • 1 head Romaine Lettuce
  • 1 can Black Beans
  • 1 cup Corn
  • 1 medium Red Bell Pepper
  • 1 cup Cherry Tomatoes
  • 1 medium Avocado
  • 1 small Red Onion
  • 1 bunch Cilantro
  • 2 tablespoon Lime Juice
  • 2 tablespoon Olive Oil
  • 1 clove Garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
Instructions
  1. In a large bowl, combine the chopped romaine lettuce, black beans, corn, diced red bell pepper, halved cherry tomatoes, diced avocado, and thinly sliced red onion.
  2. In a blender, combine the cilantro, lime juice, olive oil, garlic, cumin, salt, and pepper. Blend until smooth.
  3. Pour the cilantro dressing over the salad and toss to coat.
  4. Serve immediately and enjoy!
