Ingredients
  • 2 cup Pumpkin
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Red Bell Pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 4 cup Vegetable Broth
  • 1 cup Coconut Milk
  • 2 tablespoon Lime Juice
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Cilantro
Instructions
  1. In a large pot, sauté the onion, garlic, and red bell pepper until softened.
  2. Add the cumin and chili powder, and cook for another minute.
  3. Add the pumpkin, vegetable broth, and coconut milk. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  5. Stir in lime juice, salt, and black pepper.
  6. Serve hot, garnished with cilantro.
