Ingredients
  • 2 cup Dried pinto beans
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Bell pepper
  • 2 stalk Celery stalks
  • 1 piece Smoked ham hock
  • 2 leaf Bay leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Cayenne pepper
  • 6 cup Water
Instructions
  1. Rinse the dried pinto beans and soak them overnight.
  2. In a large pot, combine the soaked beans, chopped onion, minced garlic, diced bell pepper, sliced celery stalks, smoked ham hock, bay leaves, salt, black pepper, cayenne pepper, and water.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer for about 1 hour or until the beans are tender.
  4. Remove the bay leaves and ham hock from the pot.
  5. Serve the Southern Beans hot with rice or cornbread.
