Ingredients
  • 500 gram Tomatoes
  • 1 piece Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Sugar
  • 10 leaves Fresh basil
  • 1 cup Croutons
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
  2. Add chopped tomatoes, vegetable broth, salt, black pepper, and sugar. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Remove from heat and let the soup cool slightly. Use an immersion blender or regular blender to puree the soup until smooth.
  4. Return the soup to the pot and reheat over low heat. Stir in fresh basil leaves and cook for an additional 5 minutes.
  5. Serve the soup hot, garnished with croutons.
