Ingredients
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 2 medium Carrots
  • 2 medium Celery stalks
  • 2 clove Garlic cloves
  • 2 medium Potatoes
  • 2 medium Tomatoes
  • 1 cup Mixed vegetables
  • 2 leaf Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. In a large pot, heat vegetable broth over medium heat.
  2. Add chopped onions, carrots, celery, and minced garlic. Cook until vegetables are tender.
  3. Add diced potatoes, tomatoes, mixed vegetables, bay leaves, thyme, salt, and black pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Remove bay leaves and serve hot.
