Ingredients
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery stalks
  • 2 clove Garlic cloves
  • 2 medium Potato
  • 1 can Canned diced tomatoes
  • 1 cup Cooked chickpeas
  • 1 cup Frozen peas
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 tablespoon Fresh parsley
  • 1 tablespoon Lemon juice
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, celery, and minced garlic. Cook until vegetables are tender.
  2. Add diced potatoes, canned diced tomatoes, vegetable broth, dried thyme, dried oregano, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Add cooked chickpeas and frozen peas. Simmer for an additional 5 minutes.
  4. Remove from heat and let it rest for 5 minutes.
  5. Serve the soup in bowls, garnished with fresh parsley and a squeeze of lemon juice.
