Ingredients
  • 500 gram Sweet Potatoes
  • 2 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 2 clove Garlic
  • 1 medium Onion
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 0.25 teaspoon Cayenne Pepper
  • 2 tablespoon Parsley
Instructions
  1. Peel and chop the sweet potatoes, onion, and garlic.
  2. In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  3. Add the sweet potatoes and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the sweet potatoes are tender.
  4. Remove the pot from heat and let it cool slightly. Using an immersion blender or regular blender, blend the soup until smooth and creamy.
  5. Return the soup to the pot and stir in the coconut milk, salt, black pepper, and cayenne pepper. Heat over low heat until warmed through.
  6. Serve the smooth sweet potato cream in bowls, garnished with parsley.
