Ingredients
  • 400 gram Sweet potatoes
  • 240 gram Chickpeas
  • 4 tablespoon Tahini
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 2 clove Garlic cloves
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 2 tablespoon Water
  • 2 tablespoon Fresh parsley
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and place them on a baking sheet. Roast for 30-40 minutes or until tender.
  3. Once the sweet potatoes are cool enough to handle, peel off the skin and cut into chunks.
  4. In a food processor, combine the roasted sweet potatoes, chickpeas, tahini, olive oil, lemon juice, garlic cloves, cumin, smoked paprika, salt, and water.
  5. Blend until smooth and creamy.
  6. Transfer the hummus to a serving bowl and garnish with fresh parsley.
  7. Serve with pita bread, crackers, or fresh vegetables.
