Ingredients
  • 1 medium Onion
  • 3 cloves Garlic cloves
  • 2 medium Carrots
  • 2 stalks Celery stalks
  • 1 medium Red bell pepper
  • 2 teaspoon Smoked paprika
  • 1 teaspoon Cumin powder
  • 4 cup Vegetable broth
  • 2 cans Canned diced tomatoes
  • 2 cups Black beans, drained and rinsed
  • 1 cups Corn kernels, drained
  • 2 cups Spinach leaves
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro, chopped
Instructions
  1. Heat oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, celery, and red bell pepper, and sauté until vegetables are tender.
  3. Stir in smoked paprika and cumin powder.
  4. Add vegetable broth, diced tomatoes, black beans, and corn kernels.
  5. Bring the soup to a simmer, cover, and cook for 20 minutes.
  6. Stir in spinach leaves and lime juice. Cook for an additional 5 minutes.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with fresh cilantro.
