  • 4 slice Baguette
  • 1 cup Corn kernels
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 2 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 1 teaspoon Balsamic vinegar
  • 1 teaspoon Smoked paprika
  • 8 leaves Fresh basil leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the grill or toaster.
  2. Slice the baguette into diagonal pieces.
  3. In a bowl, combine the corn kernels, cherry tomatoes (halved), finely chopped red onion, minced garlic cloves, olive oil, balsamic vinegar, smoked paprika, torn basil leaves, salt, and black pepper.
  4. Grill or toast the baguette slices until golden brown.
  5. Top each slice with the corn and tomato mixture.
  6. Serve immediately.
