Ingredients
  • 2 pound Tomatoes
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tablespoon Olive Oil
  • 1 teaspoon Smoked Paprika
  • 3 cups Vegetable Broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 8 leaves Fresh Basil
  • 0.5 cup Greek Yogurt
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Place the tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil and sprinkle with smoked paprika.
  3. Roast in the preheated oven for 25-30 minutes, until the tomatoes are soft and slightly charred.
  4. Transfer the roasted vegetables to a blender and blend until smooth.
  5. Pour the blended mixture into a pot and add vegetable broth, salt, and black pepper.
  6. Simmer over medium heat for 5 minutes.
  7. Serve hot, garnished with fresh basil leaves and a dollop of Greek yogurt.
