Ingredients
  • 2 cup Frozen peas
  • 2 tablespoon Fresh mint leaves
  • 1 clove Garlic
  • 1 tablespoon Lemon juice
  • 2 tablespoon Extra virgin olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 4 slice Baguette
Instructions
  1. Bring a pot of salted water to a boil. Add the frozen peas and cook for 2 minutes. Drain and transfer to a bowl.
  2. Add the fresh mint leaves, garlic, lemon juice, olive oil, salt, and black pepper to the bowl with the peas. Use a fork or a potato masher to smash the peas until chunky.
  3. Toast the slices of baguette until golden brown.
  4. Spoon the smashed peas mixture onto the toasted baguette slices.
  5. Serve immediately and enjoy!
