Ingredients
  • 400 gram Eggplant
  • 300 gram Zucchini
  • 200 gram Red bell pepper
  • 200 gram Yellow bell pepper
  • 150 gram Onion
  • 4 clove Garlic
  • 400 gram Tomatoes
  • 2 tablespoon Olive oil
  • 20 gram Fresh basil leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Slice the eggplant, zucchini, and bell peppers into thin rounds.
  3. Heat olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until softened.
  4. Add the sliced vegetables to the skillet and cook for 5 minutes.
  5. Stir in the tomatoes, salt, and black pepper. Cook for another 5 minutes.
  6. Transfer the skillet to the preheated oven and bake for 20 minutes.
  7. Remove from the oven and let it rest for 5 minutes.
  8. Garnish with fresh basil leaves and serve hot.
