Ingredients
  • 500 gram Sweet Potatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Salt
  • 1 pinch Black Pepper
  • 2 tablespoon Olive Oil
  • 2 tablespoon Fresh Coriander
Instructions
  1. Peel and chop the sweet potatoes, onion, and garlic.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the onion and garlic and cook until softened.
  4. Add the sweet potatoes, cumin, coriander, salt, and black pepper. Cook for 5 minutes.
  5. Add the vegetable stock and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until the sweet potatoes are tender.
  6. Using an immersion blender, blend the soup until smooth.
  7. Stir in the coconut milk and heat for another 5 minutes.
  8. Serve hot, garnished with fresh coriander.
