Ingredients
  • 1 cup Quinoa
  • 2 cup Vegetable broth
  • 1 tablespoon Olive oil
  • 1 medium Onion
  • 2 minced Garlic cloves
  • 1 diced Bell pepper
  • 1 diced Zucchini
  • 1 cup halved Cherry tomatoes
  • 2 tablespoons chopped Fresh parsley
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring the vegetable broth to a boil. Add the quinoa and simmer for 15-20 minutes, or until the liquid is absorbed and the quinoa is tender.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  4. Add the bell pepper, zucchini, and cherry tomatoes to the skillet. Cook for 5-7 minutes, or until the vegetables are tender.
  5. Stir in the cooked quinoa, parsley, lemon juice, salt, and black pepper. Cook for an additional 2-3 minutes, until heated through.
  6. Serve hot and enjoy!
