Ingredients
  • 500 gram Pumpkin
  • 1 piece Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Heat olive oil in a pot over medium heat. Add chopped onion and minced garlic. Sauté until onion turns translucent.
  2. Add diced pumpkin and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until pumpkin is tender.
  3. Remove from heat and let it cool slightly. Use a blender to puree the soup until smooth.
  4. Return the soup to the pot, add coconut milk, salt, and black pepper. Stir well and heat through.
  5. Serve hot and enjoy!
