  1. Heat vegetable oil in a large pan or wok over medium heat.
  2. Add minced garlic and sliced onion. Stir-fry until fragrant and onion is translucent.
  3. Add diced carrot and cook until slightly tender.
  4. Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs until cooked.
  5. Add frozen peas and cooked rice to the pan. Stir-fry for a few minutes until everything is well combined.
  6. Drizzle soy sauce over the rice and stir to evenly distribute.
  7. Season with salt and black pepper. Stir-fry for another minute.
  8. Remove from heat and garnish with chopped green onions.
