  • 200 gram Cannellini beans
  • 100 gram Pasta
  • 1 piece Onion
  • 2 piece Garlic cloves
  • 1 piece Carrot
  • 1 piece Celery stalk
  • 4 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, diced carrot, and sliced celery. Cook until vegetables are softened.
  2. Add tomato paste and cook for another minute.
  3. Add cannellini beans, vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. In a separate pot, cook pasta according to package instructions. Drain and set aside.
  5. Once the soup is cooked, remove from heat and let it rest for 10 minutes.
  6. Serve the soup with cooked pasta and garnish with fresh parsley.
