Ingredients
  • 8 sheet Phyllo dough
  • 1 cup Granulated sugar
  • 1 cup Water
  • 1 tablespoon Lemon juice
  • 1 teaspoon Rosewater
  • 1 teaspoon Ground cinnamon
  • 1 cup Vegetable oil
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. In a saucepan, combine the sugar, water, lemon juice, and rosewater. Bring to a boil, then reduce heat and simmer for 5 minutes.
  3. Remove the syrup from heat and set aside to cool.
  4. Lay one sheet of phyllo dough on a clean surface and brush it with vegetable oil.
  5. Sprinkle cinnamon evenly over the oiled sheet.
  6. Place another sheet of phyllo dough on top and repeat the oil and cinnamon process.
  7. Repeat until all the sheets are stacked.
  8. Cut the stacked sheets into small rectangles or triangles.
  9. Heat vegetable oil in a frying pan over medium heat.
  10. Fry the cut dough pieces until they turn golden brown and crispy.
  11. Remove from the oil and drain on a paper towel.
  12. Dip the fried dough in the prepared syrup, ensuring they are fully coated.
  13. Allow the shaybeeyat to rest in the syrup for a few minutes.
  14. Serve the shaybeeyat warm or at room temperature.
