Ingredients
  • 4 cup Soy milk
  • 4 cup Vegetable broth
  • 2 tablespoon Sesame oil
  • 2 tablespoon Soy sauce
  • 2 clove Garlic
  • 1 thumb-sized piece Ginger
  • 1 cup Shiitake mushrooms
  • 1 head Bok choy
  • 1 block Firm tofu
  • 4 stalks Green onions
  • 1 tablespoon Sesame seeds
  • 1 teaspoon Red pepper flakes
Instructions
  1. In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, and cook until fragrant.
  2. Add sliced shiitake mushrooms and cook until they start to soften.
  3. Pour in soy milk and vegetable broth. Stir in soy sauce and red pepper flakes.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
  5. While the soup is simmering, prepare the tofu by pressing out excess water and cutting it into cubes.
  6. Add the tofu and bok choy to the pot and cook for an additional 5 minutes.
  7. Serve the hot pot garnished with sliced green onions and sesame seeds.
