Ingredients
  • 500 gram Cauliflower
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 teaspoon Curry powder
  • 1 cup Coconut milk
  • 2 cup Vegetable broth
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Cilantro
Instructions
  1. In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.
  2. Add the cauliflower florets and curry powder, and cook for a few minutes.
  3. Pour in the coconut milk and vegetable broth, and bring to a boil.
  4. Reduce heat and simmer for about 20 minutes, or until the cauliflower is tender.
  5. Use an immersion blender or transfer the soup to a blender, and blend until smooth.
  6. Stir in lime juice, salt, and black pepper.
  7. Serve hot, garnished with cilantro.
