Ingredients
  • 2 cup Long-grain rice
  • 2 tablespoon Tomato paste
  • 1 medium Onion
  • 1 medium Bell pepper
  • 2 medium Celery stalk
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 1 teaspoon Smoked paprika
  • 1/2 teaspoon Cayenne pepper
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 stalks Scallions
  • 2 tablespoon Parsley
Instructions
  1. In a large pot, heat oil over medium heat. Add onion, bell pepper, celery, and garlic. Cook until vegetables are tender.
  2. Add tomato paste, smoked paprika, cayenne pepper, salt, and black pepper. Stir well.
  3. Add rice and stir to coat with the vegetable mixture.
  4. Pour in vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes.
  5. Remove from heat and let rest for 5 minutes.
  6. Fluff the rice with a fork and garnish with chopped scallions and parsley.
  7. Serve hot.
