Ingredients
  • 500 gram Butternut Squash
  • 4 clove Garlic
  • 1 teaspoon Ginger
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Peel and dice the butternut squash.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add garlic and ginger, sauté for 1 minute.
  4. Add the diced butternut squash and sauté for 10-12 minutes, until tender.
  5. Add ground cumin, ground coriander, ground turmeric, salt, and black pepper. Stir well to coat the squash with the spices.
  6. Cook for another 2 minutes.
  7. Remove from heat and garnish with fresh cilantro.
  8. Serve hot as a side dish or as a main course with rice or bread.
