Ingredients
  • 2 piece Red Bell Peppers
  • 3 tablespoon Olive Oil
  • 2 tablespoon Red Wine Vinegar
  • 2 clove Garlic
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Honey
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 450°F (230°C). Line a baking sheet with aluminum foil.
  2. Cut the red bell peppers in half and remove the seeds and stems.
  3. Place the peppers on the prepared baking sheet, cut side down.
  4. Roast in the preheated oven for about 15-20 minutes, or until the skins are charred and blistered.
  5. Remove the peppers from the oven and immediately transfer them to a ziplock bag. Seal the bag and let the peppers steam for about 5 minutes.
  6. After steaming, carefully peel off the charred skins from the peppers.
  7. In a blender or food processor, combine the roasted red peppers, olive oil, red wine vinegar, garlic, Dijon mustard, honey, salt, and black pepper.
  8. Blend until smooth and well combined.
  9. Transfer the vinaigrette to a jar or bottle and refrigerate for at least 1 hour to allow the flavors to meld.
  10. Serve the Sarasota's Roasted Red Pepper Vinaigrette over salads or use as a dressing for various dishes.
