Ingredients
  • 1 cup Quinoa
  • 1 can Black beans
  • 1 cup Corn
  • 2 medium Tomatoes
  • 1 small Red onion
  • 0.5 cup Cilantro
  • 1 juice of Lime
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Avocado
Instructions
  1. Rinse the quinoa under cold water and cook according to package instructions. Once cooked, let it cool.
  2. In a large bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, finely chopped red onion, and chopped cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper. Pour the dressing over the quinoa mixture and toss well to combine.
  4. Cover the bowl and let the salsa quinoa rest in the refrigerator for at least 10 minutes.
  5. Before serving, dice the avocado and gently fold it into the quinoa mixture.
  6. Serve the salsa quinoa as a main dish or as a side salad. Enjoy!
