  • 2 teaspoon Olive oil
  • 1 medium Onion
  • 2 medium Carrot
  • 2 medium Celery stalk
  • 2 cloves Garlic cloves
  • 2 medium Potato
  • 2 medium Zucchini
  • 2 medium Tomato
  • 4 cup Vegetable broth
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
  • 4 tablespoon Parmesan cheese
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrot, celery, and garlic. Cook until vegetables are tender, about 5 minutes.
  3. Add potato, zucchini, tomato, vegetable broth, dried basil, dried oregano, salt, and black pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are cooked through.
  5. Stir in fresh parsley.
  6. Serve hot, garnished with grated Parmesan cheese.
