Ingredients
  • 2 pound Tomatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Olive Oil
  • 4 cup Vegetable Stock
  • 2 tablespoon Basil Leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the tomatoes, vegetable stock, basil leaves, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Use an immersion blender to puree the soup until smooth.
  4. Serve hot with a garnish of fresh basil leaves. Enjoy!
