Ingredients
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalks Celery
  • 2 clove Garlic
  • 2 medium Potato
  • 1 medium Sweet Potato
  • 1 small Turnip
  • 2 medium Tomato
  • 1 can Cannellini Beans
  • 4 cup Vegetable Broth
  • 2 tablespoon Olive Oil
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrot, celery, and minced garlic. Cook until vegetables are tender.
  2. Add diced potatoes, sweet potatoes, turnip, and tomatoes. Stir well.
  3. Pour in vegetable broth and add Italian seasoning, salt, and black pepper. Bring to a boil and then reduce heat to simmer for 30 minutes.
  4. Rinse and drain cannellini beans. Add them to the pot and cook for an additional 10 minutes.
  5. Serve hot, garnished with chopped parsley.
