Ingredients
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 1 inch Ginger
  • 2 medium Carrot
  • 2 medium Potato
  • 1 medium Sweet potato
  • 1 can Coconut milk
  • 2 teaspoon Curry powder
  • 1 teaspoon Turmeric powder
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 2 tablespoon Coconut oil
  • 2 tablespoon Fresh cilantro
Instructions
  1. Heat coconut oil in a large pot over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
  2. Add curry powder, turmeric powder, and cayenne pepper. Stir well.
  3. Add chopped carrots, potatoes, and sweet potatoes. Stir to coat with spices.
  4. Pour in coconut milk and add salt. Stir well.
  5. Bring the mixture to a boil, then reduce heat and simmer for 25 minutes or until vegetables are tender.
  6. Serve the curry over steamed rice or with naan bread.
  7. Garnish with fresh cilantro.
