Ingredients
  • 2 cup Black beans
  • 1 medium Onion
  • 2 cloves Garlic cloves
  • 1 cup Canned diced tomatoes
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Lime juice
Instructions
  1. Soak the black beans overnight in water.
  2. Drain and rinse the beans.
  3. In a large pot, sauté the onion and garlic in olive oil until fragrant.
  4. Add the black beans, diced tomatoes, cumin, chili powder, salt, and black pepper to the pot.
  5. Bring to a boil, then reduce heat and simmer for about 1 hour or until the beans are tender.
  6. Stir in fresh cilantro and lime juice.
  7. Let the beans rest for 10 minutes before serving.
