  • 4 medium Yellow Squash
  • 2 tablespoon Olive Oil
  • 4 clove Garlic
  • 1 teaspoon Red Pepper Flakes
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Lime Juice
  • 2 tablespoon Cilantro
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Cut the yellow squash into 1/2-inch thick slices.
  3. In a large bowl, toss the squash with olive oil, minced garlic, red pepper flakes, salt, and black pepper.
  4. Spread the squash in a single layer on a baking sheet.
  5. Roast in the preheated oven for 15-20 minutes, or until the squash is tender and lightly browned.
  6. Remove from the oven and drizzle with lime juice.
  7. Garnish with chopped cilantro.
  8. Let it rest for 5 minutes before serving.
