Ingredients
  • 500 gram Potatoes
  • 300 gram Carrots
  • 200 gram Brussels Sprouts
  • 150 gram Red Onion
  • 4 teaspoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 teaspoon Thyme
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the potatoes and carrots. Cut them into bite-sized pieces.
  3. Trim the Brussels sprouts and cut them in half.
  4. Peel and slice the red onion.
  5. In a large bowl, toss the vegetables with olive oil, salt, black pepper, and thyme.
  6. Spread the vegetables in a single layer on a baking sheet.
  7. Roast in the preheated oven for about 30 minutes, or until the vegetables are tender and golden brown.
  8. Remove from the oven and let rest for 5 minutes before serving.
