Ingredients
  • 800 gram Tomatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Olive oil
  • 4 cup Vegetable broth
  • 1 teaspoon Basil leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them on a baking sheet.
  3. Drizzle with olive oil, salt, and pepper.
  4. Roast in the oven for 30 minutes, or until the tomatoes are soft and slightly charred.
  5. In a large pot, heat olive oil over medium heat.
  6. Add the chopped onion and garlic, and sauté until translucent.
  7. Add the roasted tomatoes and vegetable broth.
  8. Bring to a boil, then reduce heat and simmer for 15 minutes.
  9. Use an immersion blender or transfer the soup to a blender, and blend until smooth.
  10. Season with salt, pepper, and basil leaves.
  11. Serve hot and enjoy!
