Ingredients
  • 800 gram Tomatoes
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 2 cup Vegetable broth
  • 1 cup Basil leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Heavy cream
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Roast the tomatoes in the oven for 30-35 minutes, until they are soft and slightly charred.
  4. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic cloves. Cook until the onion is translucent.
  5. Add the roasted tomatoes, vegetable broth, basil leaves, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  6. Use an immersion blender or regular blender to puree the soup until smooth.
  7. Stir in the heavy cream and heat the soup for another 5 minutes.
  8. Serve hot, garnished with fresh basil leaves.
