Ingredients
  • 2 pound Tomatoes
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Basil leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Heavy cream (optional)
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 30 minutes.
  3. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
  4. Add roasted tomatoes, vegetable broth, basil leaves, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  6. Optional: Stir in heavy cream for a creamier soup.
  7. Serve hot, garnished with fresh basil leaves.
