Ingredients
  • 200 gram Carrots
  • 200 gram Potatoes
  • 200 gram Beets
  • 100 gram Onion
  • 150 gram Lentils
  • 2 teaspoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Fresh Thyme
Instructions
  1. Preheat the oven to 200°C (400°F).
  2. Peel and chop the carrots, potatoes, beets, and onion into bite-sized pieces.
  3. In a large bowl, toss the chopped vegetables with olive oil, salt, black pepper, and fresh thyme.
  4. Spread the vegetables evenly on a baking sheet.
  5. Roast in the preheated oven for 30-40 minutes, or until the vegetables are tender and slightly caramelized.
  6. While the vegetables are roasting, cook the lentils according to package instructions.
  7. Once the lentils are cooked, drain any excess water.
  8. Serve the roasted vegetables on a bed of cooked lentils.
