  • 300 gram Carrots
  • 300 gram Potatoes
  • 200 gram Beets
  • 200 gram Parsnips
  • 2 teaspoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Fresh Thyme
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Peel and chop the carrots, potatoes, beets, and parsnips into bite-sized pieces.
  3. In a large bowl, toss the chopped vegetables with olive oil, salt, black pepper, and fresh thyme.
  4. Spread the vegetables evenly on a baking sheet.
  5. Roast in the preheated oven for 35-40 minutes, or until the vegetables are tender and golden brown.
