Ingredients
  • 500 gram Bell peppers
  • 200 gram Red onions
  • 250 gram Cherry tomatoes
  • 2 teaspoon Olive oil
  • 1 teaspoon Balsamic vinegar
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Fresh basil leaves
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut the bell peppers and red onions into thin slices.
  3. In a large bowl, toss the bell peppers, red onions, and cherry tomatoes with olive oil, balsamic vinegar, salt, and black pepper.
  4. Spread the mixture evenly on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly charred.
  6. Remove from the oven and let it rest for 5 minutes.
  7. Garnish with fresh basil leaves.
  8. Serve as a side dish or as an appetizer with crusty bread.
