Preheat the oven to 400°F (200°C).

Cut the eggplant, zucchini, red bell pepper, and yellow bell pepper into 1-inch cubes.

Slice the red onion and mince the garlic cloves.

In a large bowl, toss the vegetables with olive oil, tomato paste, dried thyme, dried oregano, salt, and black pepper.

Spread the vegetables evenly on a baking sheet.

Roast in the preheated oven for 30-40 minutes, or until the vegetables are tender and slightly caramelized.

Remove from the oven and let it rest for 10 minutes.

Garnish with fresh basil leaves before serving.
